The UW-Madison Land Information and Computer Graphics Facility (LICGF) recently published their spring 2015 course list. They have two new courses that will take the place of the retired ESRI certified ArcGIS 1 & 2 classes. They are also developing a class on the new ArcGIS Pro that comes with ArcGIS 10.3.
